Menu Development

Foodservice Management

Skill Area: Foodservice Management

 Assignment Title: Menu Development

What I learned: This assignment was helpful in teaching me how to write a production menu in a foodservice kitchen. I had to asses the diet for nutritional value, make sure it was appropriate for the children that were consuming it, and provide adequate portion sizes. There were many different components and stipulations that had to be followed when creating the menu, such as cost, the National School Food Lunch Act, and what foods the children will actually eat.

Reflection to assignment: This assignment was very enjoyable to me. I really liked being able to plan out a menu that children would enjoy, while keeping nutrition in mind. I enjoy cooking and meal planning, so I enjoyed providing a variety of foods for children to have and choose from. I had not realized how difficult the task of making a menu would be, but once I started, I was aware of how much work goes into them. I now have a greater understanding and appreciation of what foodservice managers are required to do.

Relevance to the profession:  The skills used in this assignment can be extremely vital for the foodservice profession. Many different professions in this field require menu development on a regular basis. It is important to have practiced these skills and be able to use them in the field. After this assignment, I believe I would enjoy creating more in the future.
